I’ll let you in on a secret…

Thanksgiving is next week and I’m sure you’re still scrambling for the perfect recipes to please each and every family member. Have no fear… The Dakota Restaurant’s crab and brie soup will be a crowd pleaser for all ages! The crab and brie soup has been a signature item since we opened our doors over 19 years ago!  Enjoy!

DAKOTA’S LUMP CRABMEAT AND BRIE SOUP

Ingredients:

2 lbs. Louisiana blue crabs

2 ounces olive oil

2 medium yellow onions (chopped)

1 medium carrot (chopped)

3 ribs celery (chopped)

1 pod fresh garlic (chopped)

2 each Bay leaves

1/4 cup Brandy

1 cup white wine

2 quarts water

1/2 cup unsalted butter

3/4 cup all purpose flour

1 quart heavy whipping cream

8 ounces Brie cheese

1 tsp. white pepper

1 tsp. cayenne pepper

1 tsp. salt

1/2 lb. Louisiana jumbo lump crabmeat (picked from shell)

Using a meat mallet or hammer, crack open blue crab shells until meat is exposed. In a 1 gallon stock pot, heat olive oil, add cracked crabs and saute for 5 minutes. Add chopped vegetables and bay leaves, continue to saute for an additional 5 minutes. Add brandy, white wine and water, bring to a simmer over medium heat and cook for 30 minutes. Using a skimmer, remove crabs and vegetables from stock. In a separate small saute skillet, melt butter, add flour and blend with a wire whisk until smooth and creamy, simmer over low heat for one minute. Add flour and butter mixture to stock using a wire whisk until all the roux is dissolved. Add heavy cream and simmer for 10 minutes. Remove outside rind from Brie and discard, cut Brie into 1 inch cubes, add to stock while constantly stirring until all the cheese is completely dissolved. Season soup with salt, white pepper, and cayenne pepper. Strain soup through a fine strainer, add jumbo lump crabmeat and serve. Yields 3 quarts.

And of course, you can add additional flavor with a few shakes of TABASCO brand Pepper Sauce!

OL4NO & Feed the Children

Great food, live music, our New Orleans Saints, flip flops AND  an amazing cause?!? There isn’t a better party to be invited to!

This weekend the offensive line of the New Orleans Saints (OL4NO) teamed up with Feed the Children in an effort to raise awareness, funding and food drives for our area.

The theme of the party was fleur de lis & flip flops… a great blend of our great city and football!

All of the food items had a tailgating theme such as:

Cochon de Lait-Dirty Rice Hushpuppies; Spiced Steens Cane Syrup

Natchitoches Meat Pies; Tomato-Garlic Confit

Shrimp & Blackbean Quesadillas; Fresh Prico

The amount of items that were auctioned off can’t be explained! Donated jerseys and helmets from professional teams around the country came together along with an endless supply of local vendors.

Working with Suzanne Werdanne, director of sports partnerships- Feed the Children, was excellent.  She brought everyone together to create a memorable event!

Everything that sparkles is CARTIER!

A few weeks ago I had the opportunity to work with Sak’s 5th Avenue New Orleans in a fabulous collection expo celebrating 100 years of Cartier.

The event emphasized the glamour of Cartier men and women through the precious jewels, customized champagne, models and of course my favorite: food.  The event’s theme was ‘games’ and was topped off with Cartier pages greeting guests, beautiful low profile flower arrangements by Perfect Presentations of New Orleans and an overall elegant ambiance.

Whenever you are ready to start pre-gaming we will be ready! Rambla is staying open for breakfast later than usual to make sure we all have our bloody marys and mimosas! We will also be open for lunch with 2 for 1 beer specials and awesome sandwiches!

Come back after the game too! On Sundays we are open until 10:00!

Pigskin Season!

There aren’t too many things that make me happier than football season.  There is something about the unity of our great city.. along with beer, who-dat and those black and gold boys!

Rambla Releases New Menus!

Rambla has a fabulous new lunch menu that we couldn’t be more excited about!  Daily sandwich specials along with tapas combinations make for a perfect lunch in the CBD!

We also have amazing new dinner tapas items such as Galician-Style Octopus, Moorish Chicken Sausage and Cochon de Lait.

8/29… Welcomed this year!

I can’t think of another way to honor the Katrina anniversary than by busting with business! August 29th couldn’t have felt better!
On the north-shore Christ Episcopal had their 25th anniversary and the grand opening of their high school in Covington! Dakota had amazing food for the 400+ guests to enjoy! From cochon de lait to scallop ceviche they had it all! Fat Tuesday’s had hurricanes to get everyone dancing to Four Unplugged. It was a wonderful affair!

On the south-shore we had our hands filled as well. Rambla and International House had the opportunity to host the Stewart & Ayobamidele wedding. What a unique event!

The guests had the opportunity to enjoy a VERY original menu! The couple embraced their Nigerian heritage and decided to incorporate it into many aspects of their wedding, especially the menu. Our chef, Scott Maki, prepared a menu boasting with flavors such as stewed goat, jollof rice, dodos and curried shrimp. We always enjoy the chance to do a little something out of the norm!
Thank you Bello and Rosalind for allowing me to be apart of one of the most memorable days in your life! Best wishes to you both!

Cuvee meanwhile was singing happy birthday to a great client. The Hall family rented out the entire restaurant to wish Janice a happy 60th! Guests were greeted with stuffed peppadews, crab cakes and many other miniature bites to get their palate watering for the meal that awaited them. The menu included some of our signature items such as the spiced shrimp napoleon and the chopped salad along with some seasonal specialties.

Weddings In Style Bridal Show Success!

Got the ring and you have picked out a date! You are almost there! Next step is a bridal show to meet your local vendors. This is what hundreds of women did yesterday at the Weddings In Style bridal show. It was a wonderful affair!
A jazz trio welcomed the brides to the beautiful ballroom in the Roosevelt hotel. Everyone snacked on cake samples and delicious foods (including our signature Crab and Brie Soup and Tuna, Watermelon & Basil Skewers) while checking out the latest dress trends, photography packages and sipping on champagne.
Ladies it was wonderful meeting all of you yesterday! I look forward to working with each and everyone of you individually as we create your dream wedding.

Summer time!

 

Who says a summer in New Orleans can’t be profitable?!

July has been a very busy month for us! Thank goodness!

We started the month by having our streets, hotels and restaurants booked by folks heading into town for Essence fest.

essence-music-festival-2009_st-bannerWith headliners Beyonce, John Legend, Al Green and Ne-Yo how could the city not be packed? We played our first part by catering the Hennessey Black brunch.  Hennessey requested a black themed menu along with all black décor, cocktails etc.  There was a confessional set up in a private area for guests to “confess their Essence Festival sins” and local celebs throughout.  Everyone wore the signature fedora and had a blast! hennessy-black- Next on the list was private parties hosted by the likes of Marcus Spears and a closing party for Essence Magazine.  The closing party didn’t start till the wee hours of the morning and didn’t conclude until the sun was creeping up.  It’s a good thing there was food to keep everyone going in between the fabulous cocktails mixed by LePhare.

As Essence wrapped up we welcomed T.Y.Lin International to New Orleans. They are not only the brains behind some of the world’s most prominent bridges and airports but they are a very fun group. It took many months of planning but the end result was perfect.  The group snacked on passed hors d’ oeuvres and listened to a jazz trio as they prepared themselves for a memorable meal.  Dunn and Sonnier made elegant centerpieces from English garden flowers and the restaurant was illuminated by candlelight.  Everyone took home pralines, New Orleans cookbooks and a Café Du Monde apron as a parting gift along with a full belly!

During the middle of the month New Orleans gladly hosted the Microsoft convention! Microsoft brought thousands to our city and we were fortunate enough to plan a wonderful reception hosted by Symantic.

microsoft-logo new Restaurant Cuvee was the perfect setting to get away from meetings and enjoy a fantastic glass of wine!  The evening was livened up as many X-Box 360’s and Kindle’s were given away throughout the night. Everyone left the evening with a tote filled with new software!  It was quite the treat for all of us!

On the other side of the lake Dakota was keeping busy with packed lobster nights and an awesome anniversary lunch menu! Dakota hosted the Chamber “Breakfast of Champions” which is always a wonderful to-do.  So many of our customers are involved with the Chamber so having them in our doors at such an early hour is quite the treat! The Chamber keeps all of us on our toes and involved in our local community!

Thank you for being such an amazing part of the north shore!

A Cointreau Kiss!

Who would have thought Peach Snapple and a shot of Cointreau would be such a match made in heaven? 

While catering the Vintage Bar Ware Collectors Symposium (a Tales of the Cocktail event) yesterday we sipped on the delightful Cointreau Kiss cocktail. The event was very educational as it took place in the Southern Food and Beverage Museum.  

logoThere were many exhibits for guests to check out such as a tribute to the sno-ball, po-boy and okra on the food side of things and antique bottles, prohibition facts and cocktail lagniappe for the mixologist in all of us.  Guests munched on delightful beet “truffles”, assorted charcuterie of pâté and rillettes along with wonderful imported and domestic cheeses.  

A great happy hour treat for all involved!

Did you know New Orleans is the birthplace of the cocktail?

What a great week to be a part of New Orleans! This week is “Tales of the Cocktail!”

The event brings together the best and brightest of the cocktail community—award-winning mixologists, authors, bartenders and chefs—for a five-day celebration of the history and the craft of the cocktail.

We had the opportunity to “stir our soul” on Monday night. Rambla hosted a group of bloggers and food writers as they dined on a fabulous tapas selection paired with cocktails. The event was hosted by Leblon Cachaça so many of the drinks had the delicious sugar cane liquor involved.

**Fun fact: Cachaça, the third most-consumed spirit in the world, is the key ingredient to the Caipirinha, Brazil’s national drink. Cachaça (ka-SHAH-sa) is made from fresh-pressed cane juice fermented and distilled, and can only come from Brazil.**

St. Charles Avenue… Thibaut & Laborde Wedding

In the next couple days the July issue of St. Charles Avenue magazine will hit news stands.  I got a sneak preview a few moments ago as we have the featured wedding in this months issue. We had the pleasure of coordinating the entire event and working with Dunn & Sonnier, one of our favorite florists! Two Sweet Sisters made an amazing cake and photography was done by Louis’ and Alicia Hartfield.  The entire event was a centered around thoughts of a “French Provincial Picnic” with a color scheme of greens and lavenders.  Truly a wedding to remember!  From the specially purchased confit pots to hold flower arrangements to the dragonfly inspired truffles everything was well thought out and original.  Our bride, Betsy Thibaut-Laborde, was involved from the first step of planning and worked with us as we brought her dreams to reality.  

Best wishes to Betsy and her husband, Eric Laborde, as they begin their life together in Chicago.

Betsy & Eric “I’m just looking for a happy ending. All I’m looking for is you.” Those Pat Green lyrics from his hit song “Wave on Wave” ring true for Elizabeth Reynaud Thibaut and Eric Lanning Laborde M.D., who met on a blind date at none other than a Pat Green concert at the House of Blues in New Orleans. Eric’s cousin, Scott Condon, who’s also a close friend of Betsy’s, set the two up. That night they instantly hit it off and have been together every day since. Almost two years later, Eric knew he had found “the one” and decided to create their happy ending. On the last day of a vacation to St. Martin, Eric asked Betsy to marry him. On the way back from dinner, Eric had their driver stop. When Betsy got out of the car, in front of her stood a walkway, lit with votives, leading to a veranda that overlooked the ocean. The veranda was covered with a rose petal walkway and in the middle of it sat a bucket of champagne with two glasses. Enraptured, Betsy turned back to find Eric on his knee. But oops, when he opened the ring box, he opened it upside down so that the ring fell out and Betsy’s instantly thought he was playing a joke on her as she stared down at an empty ring box. He shouted, “No, no, I have a ring!” Realizing he was serious, she instantly said, “Yes!” As soon as they returned from their vacation, Betsy’s mother began planning the elegant wedding. The ceremony was held at St. Peter Catholic Church in Covington on May 9, 2009. The bride walked down the aisle in a strapless, custom-made Priscilla of Boston gown of antique lace with appliqué flowers, intricate beading and satin ribbon wrapped around the gown’s tiers. She carried a bouquet created by Stephen Sonnier of Dunn & Sonnier made of acid green orchids, cream and fuchsia peonies and lavender roses. Her bridesmaids carried bouquets of blue and purple hydrangea and wore Vera Wang lavender floor-length gowns from Town and Country with tulle trimmed bodices and a satin ribbon at each waist.  Following the ceremony, the bridal party and guests gathered at Betsy’s parents’ home in Covington for the reception. Kenny LaCour, along with Dunn & Sonnier, decorated the backyard in a French Provincial theme. A giant oak tree in the backyard was decorated with enormous antique chandeliers and floral arrangements of hydrangea, roses, delphiniums, peonies, orchids and tulips. “The ambiance of reception created by the lighting was absolutely amazing,” the bride says.  The couple danced their first dance atop a bridge, over the pool lit with votives to James Brown’s “I’ve Got You.” The Drywater Band from Houston, Texas got guests dancing with a variety of songs. Guests also enjoyed a large buffet by Kenny LaCour, owner of Dakota, Rambla and Cuvée,. Guests were treated to grilled flatbreads, fabulous cheeses, a crêpe station with various fillings, as well as freshly made sushi by three on-site sushi chefs and a station that included brisket, crawfish cheese grit tamales and mini fried oyster poor boys.  The wedding cake, created by Two Sweet Sisters, was a six-tier creation covered with hundreds of individual fondant leaves, topped with sugar replications of lavender peonies. The groom’s cake was a replica of Betsy’s wedding gift to Eric, a Browning Belgian-made over-under shotgun. Two Sweet Sisters duplicated the gun, made out of chocolate covered Rice Krispie Treats, and placed it on top of a gun case made of cake. A “sitting duck” sat on the side of the gun, also made of cake. The bride and groom had a photo booth set up for guests with crazy hats and props so everyone could take photos to remember the night. But one of the best features of the reception was the unbelievable fireworks display that lit up the sky signaling the end of the evening. The newlyweds left their reception down a walkway, lined with guests holding sparklers, and sped off to Hawaii for two weeks.  The couple resides in Covington temporarily, where Betsy is Vice President of Sales for Factory Sales and Engineering and Eric is a Urologist, having completed his residency with the Ochsner/LSU program in June. The couple will be moving to Chicago this summer for Eric to do a one-year fellowship with Northwestern, but upon their return Eric will be working for Ochsner.

2009 so far…in quick rewind…

With launching my blog halfway through the year I feel like there is so much to share and catch up on. In an effort to not write a novel I will give a few highlights… 2009 has been quite a year for us!

Our catering company, DCE, has taken off even more and we opened our third restaurant, Rambla right before the start of the year!

Starting in January New Orleans then had the opportunity to host PCMA which brought thousands of meeting planners to our city. We got to fill the bellies of both the Denver and Dallas CVB’s, what a treat!

Mardi Gras brought both the Olympia and Juno balls our way. Got to love feeding over 1,000 people at once!

February officially kicked off our wedding season. From NOMA to the North-Shore we took care of each and every one of our brides. I think we are just beginning to take a break from cakes, florals and champagne!

In April we had the chance to take care of the Fellows Dinner. The Fellows are those who make the donations in order to keep NOMA the magnificent museum that it is. From chicken and waffles to Riesling poached pear they were treated like kings and queens.

While keeping busy with all of the spring happenings we still found time to “give back” a little as well. Sak’s “Key to the Cure”, The Ogden Museums “Sippin’ in Seersucker”, The Feed the Children Gala, NOMA’s “Art in Bloom”, The New Orleans Hispanic “Azucar Ball”, St. Paul’s School, SSA, and The D-Day Archbishop Hannan Fundraiser are a few among the many that we participated in!

Most recently summer has set in! What a better time to get ready for LSU football! The Tammany Tigers are dear to us and we recently hosted them at Joel Champagne’s Classic Car Museum. While guests snacked on “Cochon de Lait” flatbread & crab cakes coach Les Miles mingled and took photos with everyone.

And what’s on this weekend’s agenda? Essence Festival! Thanks to LRG we will all be busy! Loa, LePhare and Republic New Orleans will be hosting endless events throughout the weekend.
